Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a muffin pan with liners or non-stick spray.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the milk, melted butter, eggs, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Fold in the diced peaches until evenly distributed in the batter.
  6. Fill each muffin cup about two-thirds full with the batter.
  7. In a small bowl, mix brown sugar and cinnamon for the topping and sprinkle on muffins.
  8. Bake in the preheated oven for 18-20 minutes or until golden brown and a toothpick comes out clean.
  9. Cool muffins in the pan for about 5 minutes before transferring to a wire rack to cool completely.
