  1. Start by allowing the burrata cheese to sit at room temperature for about 20 minutes.
  2. In a small bowl, combine the white balsamic vinegar, extra virgin olive oil, Dijon mustard, sea salt, and black pepper. Whisk until emulsified.
  3. On a serving platter, arrange a bed of mixed lettuce and arugula.
  4. Slice peaches into thin wedges and arrange them around the salad, squeezing fresh lemon juice over them.
