Method
 

Step‑by‑Step Instructions
  1. Wash the fresh arugula and spin dry.
  2. Rinse the peaches, pat dry, and slice into wedges.
  3. Cut cherry tomatoes in half and slice cucumbers.
  4. Combine arugula, peaches, tomatoes, and cucumbers in a bowl.
  5. Soak sliced red onion in water, then add to salad.
  6. In a separate bowl, whisk together olive oil, balsamic vinegar, honey or maple syrup, salt, and pepper.
  7. Drizzle dressing over the salad before serving and toss gently.
