  • 8 oz Orecchiette or substitute with other pasta types
For the Base
  • 2 Yellow Onions sliced
  • 4 cloves Garlic minced
  • 4 cups Water
  • 1 cube Beef Bouillon or substitute with beef broth
For Creaminess
  • 1 can Evaporated Milk do not use fresh milk
For Depth of Flavor
  • 2 tbsp Worcestershire Sauce essential for umami
  • 1 tbsp Soy Sauce use reduced sodium if preferred
For Freshness
  • 1 tbsp Fresh Thyme or use dried
  • 1 tbsp Fresh Parsley or use dried
For Seasoning
  • 1 tsp Dried Oregano season to taste
  • 1 tsp Paprika season to taste
  • ½ tsp Red Pepper Flakes adjust based on heat preference
For the Cheese
  • 1 cup Gruyere Cheese aged recommended
  • ½ cup Parmesan Cheese freshly grated for best results

Preparation Steps
  1. Slice the yellow onions into ⅛-inch rings and set aside.
  2. Caramelize the onions in a large pot over medium heat for 30-35 minutes until golden brown.
  3. Add minced garlic and red pepper flakes and sauté for 30 seconds.
  4. Pour in Worcestershire sauce and soy sauce, stirring to combine.
  5. Incorporate water and evaporated milk, add beef bouillon, and bring to a gentle boil.
  6. Once boiling, add orecchiette and cook uncovered for 11-14 minutes until al dente.
  7. Stir in Gruyere and Parmesan cheeses, adjust seasoning with salt and pepper if needed.
