  • 1/2 cup Milk Any non-dairy milk can be substituted.

  • 2 large Eggs Use a flax egg for a vegan alternative.
  • 1/4 cup Ketchup BBQ sauce can be used for bolder flavor.

For the Cheese

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C). Gather all ingredients for easy access when mixing.
  2. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to cool and crumble.
  3. Sauté chopped onions and mushrooms in the same skillet over medium heat for about 5 minutes until softened. Let them cool slightly.
  4. In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, Parmesan cheese, crumbled bacon, Swiss cheese, sautéed onions and mushrooms, eggs, Worcestershire sauce, and 1 tablespoon of ketchup. Season with garlic powder, thyme, salt, and pepper; mix gently until just combined.
  5. Transfer the meat mixture to a greased baking dish and shape into a loaf. Ensure a uniform shape for even cooking.
  6. Spread the remaining ketchup evenly over the top of the meatloaf.
  7. Bake in the preheated oven for 60-70 minutes, checking internal temperature reaches 160°F (71°C).
  8. Remove from oven and let rest for 10 minutes before slicing.
