Cooking Steps
- Preheat your oven to 375°F (190°C). Gather all ingredients for easy access when mixing.
- Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to cool and crumble.
- Sauté chopped onions and mushrooms in the same skillet over medium heat for about 5 minutes until softened. Let them cool slightly.
- In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, Parmesan cheese, crumbled bacon, Swiss cheese, sautéed onions and mushrooms, eggs, Worcestershire sauce, and 1 tablespoon of ketchup. Season with garlic powder, thyme, salt, and pepper; mix gently until just combined.
- Transfer the meat mixture to a greased baking dish and shape into a loaf. Ensure a uniform shape for even cooking.
- Spread the remaining ketchup evenly over the top of the meatloaf.
- Bake in the preheated oven for 60-70 minutes, checking internal temperature reaches 160°F (71°C).
- Remove from oven and let rest for 10 minutes before slicing.
