- Preheat your oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish.
- In a high-sided skillet over medium-high heat, cook ground beef with salt for 5-7 minutes until browned. Stir in garlic and mushrooms, cooking for another 6-8 minutes until mushrooms have shrunk.
- Transfer the beef and mushroom mixture into the prepared baking dish. Crumble goat cheese into the mixture and stir in two-thirds of the Swiss cheese. Top with chopped scallions and the remaining Swiss cheese.
- Bake uncovered for about 15 minutes until the cheese is melted and golden.
- Let the casserole cool for 5 minutes before serving. Enjoy warm with a side salad or cauliflower mash.
