Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish.
  2. In a high-sided skillet over medium-high heat, cook ground beef with salt for 5-7 minutes until browned. Stir in garlic and mushrooms, cooking for another 6-8 minutes until mushrooms have shrunk.
  3. Transfer the beef and mushroom mixture into the prepared baking dish. Crumble goat cheese into the mixture and stir in two-thirds of the Swiss cheese. Top with chopped scallions and the remaining Swiss cheese.
  4. Bake uncovered for about 15 minutes until the cheese is melted and golden.
  5. Let the casserole cool for 5 minutes before serving. Enjoy warm with a side salad or cauliflower mash.
