  • 1 cup Unsweetened Applesauce Can replace with extra mashed bananas
  • 1/2 cup Maple Syrup Or your favorite sugar substitute
  • 1/4 cup Melted Coconut Oil Or vegetable oil
  • 2 pieces Eggs Or egg substitute like flaxseed meal
  • 1/2 cup Greek Yogurt Dairy-free option: silken tofu
  • 1 teaspoon Vanilla Extract
  • 1 scoop Protein Powder Any kind works
  • 1 cup Oat Flour Or whole wheat flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Salt
  • 1/2 cup Chopped Walnuts or Pecans Optional
  • 1/4 cup Peanut Butter Optional

Method
 

Preparation Steps
  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mash ripe bananas in a large bowl until smooth, leaving a few lumps.
  3. Stir in applesauce, maple syrup, melted coconut oil, eggs, Greek yogurt, and vanilla extract until creamy.
  4. In another bowl, whisk together oat flour, protein powder, baking soda, ground cinnamon, and salt.
  5. Fold dry mixture into wet ingredients until just combined, avoiding over-mixing.
  6. If desired, fold in chopped nuts or peanut butter.
  7. Pour batter into the greased loaf pan and smooth the top.
  8. Bake for 45-55 minutes, checking for doneness around 45 minutes.
  9. Cool banana bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
