- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.
- In another bowl, mix shredded carrot, water, oil or applesauce, vanilla extract, and egg until well combined.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Transfer the batter into the prepared loaf pan and smooth the top.
- Bake for approximately 1 hour or until a toothpick inserted comes out mostly clean.
- Allow to cool in the pan for about 10 minutes before inverting onto a plate to cool completely.
