  • 1/2 teaspoon Smoked Paprika Regular paprika can replace it.
  • 1/2 teaspoon Ground Cumin Can be omitted if unavailable.

Step-by-Step Instructions
  1. Begin by prepping all your ingredients: crumble cotija cheese, slice scallions, chop cilantro, and mince jalapeño and garlic.
  2. In a large skillet, heat vegetable oil over high heat until shimmering, about 1-2 minutes.
  3. Add the corn and a sprinkle of kosher salt. Let it sit undisturbed for 2 minutes, then stir occasionally for 6-8 minutes until charred.
  4. Transfer the charred corn to a bowl and allow it to cool for about 5 minutes.
  5. In a separate bowl, whisk together mayonnaise, lime juice, chili powder, smoked paprika, and ground cumin.
  6. Pour the dressing over the cooled corn and add cotija cheese, scallions, cilantro, jalapeño, and garlic. Gently fold together.
  7. Taste and adjust the seasoning as needed with extra salt or chili powder.
