Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of avocado oil over medium-high heat for about 1-2 minutes until it shimmers.
  2. Add 3 cups of diced Yukon gold potatoes to the skillet, spreading them evenly. Cook for approximately 5-6 minutes, stirring occasionally.
  3. Push the cooked potatoes to one side and add 1 pound of lean ground beef, crumbling it as it cooks, along with 1 cup of diced yellow onion and 1 cup of diced red bell pepper.
  4. Stir in 1 can of diced green chiles, 1 tablespoon of chili powder, 1 teaspoon of ground cumin, and 1 teaspoon of smoked paprika.
  5. Sprinkle 1 cup of shredded cheese over the skillet mixture and allow it to melt for about 2-3 minutes on low heat.
  6. Garnish with fresh cilantro and serve warm.
