  • 2 cups Greek yogurt plain or vanilla
  • 1/2 cup key lime juice can substitute with regular lime juice
  • 1/4 cup sweetener such as honey or maple syrup
Topping
  • 1/2 cup graham cracker crumbs or gluten-free crumbs
  • 2 whole key limes zest the limes for flavor

Method
 

Preparation
  1. In a large mixing bowl, combine Greek yogurt, key lime juice, sweetener, and the zest of the key limes. Whisk until smooth and creamy.
  2. Line a baking sheet with parchment paper. Pour the yogurt mixture onto the sheet and spread it evenly to about ½ inch thick.
  3. Sprinkle graham cracker crumbs over the yogurt layer and gently press them into the mixture.
  4. Place the baking sheet in the freezer for 2-3 hours or until the mixture is completely firm.
  5. Once set, remove from the freezer, lift the parchment paper, and cut into squares or rectangles.
  6. Serve immediately or store in a sealed container in the freezer.
