- In a large mixing bowl, combine Greek yogurt, key lime juice, sweetener, and the zest of the key limes. Whisk until smooth and creamy.
- Line a baking sheet with parchment paper. Pour the yogurt mixture onto the sheet and spread it evenly to about ½ inch thick.
- Sprinkle graham cracker crumbs over the yogurt layer and gently press them into the mixture.
- Place the baking sheet in the freezer for 2-3 hours or until the mixture is completely firm.
- Once set, remove from the freezer, lift the parchment paper, and cut into squares or rectangles.
- Serve immediately or store in a sealed container in the freezer.
