  • 1/4 cup Fresh Parsley or cilantro as a substitute

  • 3 tablespoons Olive Oil
  • 3 cloves Garlic minced
  • 2 cups Cherry Tomatoes
  • 1 medium Bell Pepper any color
  • 2 medium Zucchini
For Seasoning
  • 1 tablespoon Dried Oregano or Italian seasoning
  • 1 teaspoon Paprika smoked paprika for variation
  • to taste Salt
  • to taste Black Pepper
Optional Add-Ons
  • 1/2 cup Olives black or green
  • 1/2 cup Feta Cheese crumbled

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Lightly coat a large baking dish with olive oil.
  3. Layer the cherry tomatoes, bell peppers, and zucchini in the baking dish.
  4. Drizzle the vegetables with olive oil and sprinkle with garlic, oregano, paprika, salt, and black pepper.
  5. Place the white fish fillets on top of the vegetables and cover generously with lemon slices.
  6. Cover the baking dish with aluminum foil and bake for 20-25 minutes.
  7. Optionally, remove foil and broil for an additional 5-10 minutes for crispiness.
  8. Garnish with parsley and serve warm.
