  1. Begin by peeling and thinly slicing two ripe mangoes, ensuring to remove any fibrous bits for a smoother texture. Next, chop half a red onion, dice one cucumber, and slice one red bell pepper into thin strips. Halve a cup of cherry tomatoes and set all the ingredients aside in a large mixing bowl.
  2. In a small mixing bowl, whisk together ¼ cup of fresh lime juice, 2 tablespoons of honey, and 3 tablespoons of olive oil. Add a pinch of salt and a dash of black pepper to taste. Continue whisking until the mixture is fully emulsified and should appear glossy, creating a zesty dressing.
  3. Gently layer the sliced mango, red onion, cucumber, red bell pepper, and halved cherry tomatoes in the large bowl. Sprinkle in a handful of fresh cilantro and mint.
