Ingredients

For the Cake
  • 1 cup White Granulated Sugar essential for sweetness and flavor balance in your cake.
  • 1/2 cup Salted Butter adds richness and moisture; consider using unsalted butter for a milder taste.
  • 1 large Egg provides structure, binding, and helps the cake rise perfectly.
  • 1 cup Plain Greek Yogurt adds moisture and a tender texture; can be substituted with buttermilk or sour cream.
  • 1 teaspoon Pure Vanilla Extract enhances the overall flavor; for best results, always opt for pure extract.
  • 2 cups All-Purpose Flour gives structure; make sure to sift for a lighter cake.
  • 2 teaspoons Baking Powder a crucial leavening agent that ensures the cake rises beautifully.
For the Fruits
  • 2 cups Fresh Strawberries hulled and halved to bring natural sweetness.
  • 2 medium Yellow Peaches juicy slices add a refreshing summer flavor that complements the strawberries.

Equipment

  • 9x3-inch springform pan

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F.
  2. Line the bottom of your springform pan with parchment paper and grease the sides with butter.
  3. In a large mixing bowl, whisk together the white granulated sugar and melted salted butter until light and fluffy, about 2 minutes.
  4. Mix in the plain Greek yogurt and pure vanilla extract until fully combined.
  5. Gradually add sifted all-purpose flour and baking powder to the wet ingredients and gently mix until just combined.
  6. Spoon the batter into the prepared springform pan and smooth it out gently.
  7. Arrange ⅔ of the hulled and halved strawberries cut-side down into the batter, then layer half of the sliced yellow peaches over the strawberries.
  8. Place the pan in the preheated oven and bake for 50 to 60 minutes.
  9. Check for doneness by inserting a toothpick into the center. If it comes out clean, the cake is ready.
  10. Let the cake cool in the pan for about 40 minutes, then carefully release it.
  11. Dust with powdered sugar if desired and serve warm.
