- Preheat your oven to 350°F.
- Line the bottom of your springform pan with parchment paper and grease the sides with butter.
- In a large mixing bowl, whisk together the white granulated sugar and melted salted butter until light and fluffy, about 2 minutes.
- Mix in the plain Greek yogurt and pure vanilla extract until fully combined.
- Gradually add sifted all-purpose flour and baking powder to the wet ingredients and gently mix until just combined.
- Spoon the batter into the prepared springform pan and smooth it out gently.
- Arrange ⅔ of the hulled and halved strawberries cut-side down into the batter, then layer half of the sliced yellow peaches over the strawberries.
- Place the pan in the preheated oven and bake for 50 to 60 minutes.
- Check for doneness by inserting a toothpick into the center. If it comes out clean, the cake is ready.
- Let the cake cool in the pan for about 40 minutes, then carefully release it.
- Dust with powdered sugar if desired and serve warm.
