  • 1 cup heavy cream can substitute with half-and-half or Greek yogurt
  • 1/2 cup Parmesan cheese substitute with nutritional yeast or vegan Parmesan
  • 1 unit lemon fresh juice and zest
For the Vegetables
  • 2 medium zucchini spiralized; substitute with yellow squash or bell peppers
For Flavor
  • 3 cloves garlic minced
  • 1/4 cup fresh parsley chopped
To Serve
  • to taste cracked pepper freshly cracked is best
  • 1/4 cup extra Parmesan for garnishing

Method
 

Step-by-Step Instructions
  1. Boil the pasta in salted water according to package instructions until al dente, about 8–10 minutes, then reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a medium skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add spiralized zucchini to the skillet with garlic and cook for 2–3 minutes until just tender.
  4. Pour heavy cream into the skillet, add lemon zest and juice, and simmer for about 2 minutes.
  5. Stir in grated Parmesan cheese until melted completely into the sauce.
  6. Add the drained pasta, tossing to coat with the sauce, adding reserved pasta water if needed for consistency.
  7. Season with salt and freshly cracked black pepper. Mix in chopped parsley.
  8. Plate the pasta and garnish with extra Parmesan and a sprinkle of cracked pepper, serving with lemon wedges on the side.
