- Preheat your oven to 400°F (200°C).
- Melt the unsalted butter in a medium saucepan over medium heat for about 2–3 minutes.
- Add minced garlic to the melted butter and sauté for about 1 minute until fragrant.
- Stir in the lemon juice and lemon zest into the garlic butter mixture and let it simmer for 1-2 minutes.
- Place the cod fillets in a single layer in a baking dish and pour the lemon garlic butter sauce over them.
- Bake the cod in the preheated oven for 12-15 minutes until it flakes easily with a fork.
- Remove the dish from the oven and sprinkle chopped parsley over the top before serving.
