  • 4 large Eggs, beaten Ensure eggs are at room temperature.
For the Glaze
  • 2 cups Powdered Sugar Can be replaced with a sugar substitute.
  • 2 tbsp Butter, melted Can substitute with plant-based butter.
  • 1/3 cup Fresh Lemon Juice Prefer fresh juice over bottled.
  • 2 tbsp Water Adjust for desired consistency.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. Beat 4 large eggs in a mixing bowl until pale and frothy, about 2 minutes.
  3. Add yellow cake mix, instant lemon pudding mix, vegetable oil, and water to the eggs. Blend on medium speed for about 2 minutes.
  4. Pour the batter into the prepared baking pan and smooth the top.
  5. Bake in the oven for 30-35 minutes until golden brown and a toothpick comes out with moist crumbs.
  6. While baking, whisk together melted butter, powdered sugar, fresh lemon juice, and 2 tablespoons of water for the glaze.
  7. Poke holes in the warm cake and drizzle the glaze over it.
  8. Allow the cake to cool completely in the pan before slicing into squares.
