  • 1/2 cup flour can use whole wheat flour

Method
 

Baking Instructions
  1. Preheat your oven to 400°F (200°C) and prepare your muffin tin.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the Greek yogurt, vegetable oil, egg, vanilla extract, lemon juice, and lemon zest.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Fold in the blueberries carefully.
  6. Prepare the streusel by mixing melted butter, flour, sugar, and oats until crumbly.
  7. Spoon the muffin batter into the prepared tin and sprinkle streusel on top.
  8. Bake for 5 minutes at 400°F, then lower to 375°F (190°C) and bake for another 10 to 15 minutes until golden.
  9. Cool for 5 minutes before transferring muffins to a wire rack.
