Method

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Slice medium-sized zucchinis into thin rounds, about ¼ inch thick. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture.
  3. In a medium bowl, combine ricotta cheese, dried basil, dried oregano, garlic powder, salt, and black pepper. Mix well.
  4. In a large skillet, heat olive oil over medium heat. Add the salted zucchini slices and sauté for 3-4 minutes until slightly softened.
  5. In a baking dish, pour a layer of marinara sauce at the bottom. Begin layering with sautéed zucchini, dollops of the ricotta mixture, and shredded mozzarella. Repeat the layers until all ingredients are used, finishing with marinara sauce and mozzarella on top.
  6. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes until cheese is bubbly and golden brown.
  7. Let cool for a few minutes, garnish with fresh basil, and serve warm.
