Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat 1 tablespoon of vegetable oil over medium-high heat. Sear the beef chuck roast for 4-5 minutes on each side until golden brown.
  3. Remove the beef and add one sweet onion, 6 minced garlic cloves, and 1 tablespoon of grated fresh ginger to the pot. Sauté for 3-4 minutes until translucent.
  4. In a bowl, combine 2 tablespoons of gochujang, ¼ cup of brown sugar, ½ cup of soy sauce, and 2 cups of beef broth. Stir and pour it over the sautéed aromatics.
  5. Return the seared beef to the pot, cover with a lid, and bake in the oven for 4-5 hours until fork-tender.
  6. Let it rest for 15 minutes after removing from the oven. Slice and serve over cooked rice, garnished with fresh cilantro and kimchi.
