  • 1 cup All-purpose flour Or gluten-free blend
  • 1/2 cup Unsalted butter Cold
  • 2 tablespoons Cornstarch To thicken filling
  • 1 large Egg Beaten, for brushing crust
For the Filling
  • 4-5 cups Peaches Sliced, fresh or canned
  • 1/2 cup Granulated sugar Adjustable based on sweetness
  • 1 tablespoon Lemon juice Freshly squeezed
  • 1/2 teaspoon Cinnamon Optional
  • 1 teaspoon Vanilla extract
For the Topping
  • 2 tablespoons Coarse sugar Optional, for garnish

Method
 

Crust Preparation
  1. In a large mixing bowl, whisk together flour and salt. Cut in cold butter until crumbled. Add ice water, mix until dough forms. Shape into a disk, wrap in plastic, chill for 30 minutes.
Filling Preparation
  1. Slice peaches and combine with sugar, cornstarch, lemon juice, cinnamon, and vanilla in a bowl. Toss gently to coat.
Dough Rolling
  1. Preheat oven to 400°F (200°C). Roll out the chilled dough on a floured surface to a 12-inch circle. Transfer to a parchment-lined baking sheet.
Tart Assembly
  1. Spoon peach mixture into the center, leaving a 2-inch border. Fold edges over peaches, brush with egg, and sprinkle with coarse sugar.
Baking
  1. Bake for 35-40 minutes until the crust is golden and peaches bubbly. Allow to cool for 15 minutes before serving.
