- Clean and gut the whole snapper, remove scales, rinse and pat dry. Make slashes on each side, season with black pepper and thyme.

- Mix kosher salt with water until damp. Create a salt bed on a tray, place fish on top and cover fully with salt.

- Preheat oven to 400°F (200°C). Bake fish for 25-30 minutes until the salt crust is hard and fish flakes easily.

- Heat olive oil in a skillet, sauté onions and garlic until translucent. Add bell peppers and stir-fry for 5 minutes.

- Pour vinegar into the skillet, add additional black pepper and thyme. Simmer for 3-5 minutes.

- Crack the salt crust, lift the fish to a platter, serve with escovitch veggies and garnish with fresh herbs if desired.
