Steps
- Preheat your oven to 350°F (175°C). Gather your ingredients while the oven is heating.
- In a large skillet, heat oil over medium-high heat. Add ground beef and diced onions. Cook for 5-7 minutes until browned. Drain excess grease.
- Reduce heat to medium, add taco seasoning, RO*TEL, corn, black beans, and enchilada sauce. Stir and simmer for 2-3 minutes.
- Remove from heat and let cool slightly. Fold in sour cream until smooth.
- Layer half of the Fritos in a 9x13-inch baking dish, then spread the meat mixture evenly over. Top with 1.5 cups of cheese.
- Add remaining Fritos on top, followed by the rest of the beef mixture and sprinkle with remaining cheese.
- Bake for 15-20 minutes until cheese is melted and bubbly.
- Let it rest for 2-3 minutes, then garnish with lettuce, tomatoes, jalapeños, and green onions. Serve warm.
