  • 1.5 pounds ground beef can substitute with turkey or plant-based meat
  • 1 cup diced onions shallots or green onions also work well
  • 1 tablespoon taco seasoning try homemade seasoning or a low-sodium version
  • 1 can (10-ounce) RO*TEL or substitute with regular diced tomatoes and a dash of chili powder
  • 1 can (15-ounce) corn opt for frozen or fresh corn instead of canned for fresher taste
  • 1 can (15-ounce) black beans pinto beans work nicely as a substitute
  • 1 can (10-ounce) enchilada sauce consider homemade sauce or salsa
  • 1.5 cups Mexican blend cheese can switch to cheddar or pepper jack
  • 1 bag Frito corn chips tortilla chips or crushed taco shells can be a tasty alternative
  • 1 cup sour cream Greek yogurt can be used as a healthier substitute
For Garnishing
  • 1 cup shredded lettuce any fresh greens can substitute as desired
  • 1 cup sliced tomatoes using cherry tomatoes adds sweetness
  • 1/2 cup sliced jalapeños omit if looking for a milder flavor
  • 1/4 cup chopped green onions consider fresh herbs for additional aromatics

Method
 

Steps
  1. Preheat your oven to 350°F (175°C). Gather your ingredients while the oven is heating.
  2. In a large skillet, heat oil over medium-high heat. Add ground beef and diced onions. Cook for 5-7 minutes until browned. Drain excess grease.
  3. Reduce heat to medium, add taco seasoning, RO*TEL, corn, black beans, and enchilada sauce. Stir and simmer for 2-3 minutes.
  4. Remove from heat and let cool slightly. Fold in sour cream until smooth.
  5. Layer half of the Fritos in a 9x13-inch baking dish, then spread the meat mixture evenly over. Top with 1.5 cups of cheese.
  6. Add remaining Fritos on top, followed by the rest of the beef mixture and sprinkle with remaining cheese.
  7. Bake for 15-20 minutes until cheese is melted and bubbly.
  8. Let it rest for 2-3 minutes, then garnish with lettuce, tomatoes, jalapeños, and green onions. Serve warm.
