- Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper.
- Gently unwrap the thawed filo pastry and cut the sheets into 36 squares, about 10cm x 10cm each.
- Generously apply melted butter over each square of filo pastry using a pastry brush.
- Place a slice of creamy brie and about a teaspoon of cranberry sauce on each buttered filo square, then sprinkle almond flakes on top.
- Roll the filled filo squares towards the opposite end and pinch the ends to seal each cracker.
- Brush the rolled crackers with melted butter and sprinkle black sesame seeds on top.
- Bake in the preheated oven for 15-20 minutes until golden brown and crispy.
- Let the crackers cool slightly, then garnish with fresh rosemary leaves or chives before serving.
