Ingredients

For the Beef
  • 1 pound Chuck Roast or Flank Steak Thinly sliced cuts elevate tenderness and flavor; skirt steak or sirloin can be great alternatives.
For the Sauce
  • 2 tablespoons Canola Oil Ideal for sautéing beef; olive oil works too if preferred.
  • 4 cloves Garlic Minced; fresh garlic packs aromatic flavor.
  • ¾ cup Beef Broth Enhances umami flavor; low-sodium broth or water is an acceptable substitute.
  • ½ cup Soy Sauce Provides a savory depth; switch to gluten-free soy sauce or coconut aminos for a gluten-free fix.
  • ⅓ cup Brown Sugar Balances the savory sauce; honey or white sugar can step in if needed.
  • 2 tablespoons Sesame Oil Adds a delightful nutty flavor; don't skip it if you can help it.
For the Vegetables
  • 1 pound Broccoli Cut into florets; fresh is optimal for crunch.
  • 3 tablespoons Water Necessary for steaming broccoli in the pot.
For Thickening
  • 3 tablespoons Cornstarch A must for thickening the sauce; can be omitted for a thinner texture.

Equipment

  • Instant Pot

Method

Step-by-Step Instructions
  1. Begin by adding 2 tablespoons of canola oil to your Instant Pot and setting it to the 'Sauté' function. Once the oil is hot, add the thinly sliced beef in batches, browning each side for about 3-4 minutes.
  2. After the beef is browned and removed, stir in ¾ cup of beef broth, 4 cloves of minced garlic, ½ cup of soy sauce, ⅓ cup of brown sugar, and 2 tablespoons of sesame oil. Mix well until the sugar is dissolved.
  3. Return the browned beef to the pot, ensuring it's covered by the sauce. Close the lid securely, set the valve to 'Sealing,' and select 'Pressure Cook' on high for 10 minutes.
  4. Once the timer beeps, switch the valve to 'Venting' for a quick release of steam. After the steam has escaped, open the lid and check the beef.
  5. In a small bowl, mix 3 tablespoons of cornstarch with 3 tablespoons of water until smooth. Stir this into the mixture in the pot, then select 'Sauté' again and let it simmer for 2-3 minutes.
  6. Add the 1 pound of cut broccoli florets to the pot, sprinkle over the beef, and add 3 tablespoons of water. Cover and cook on 'Sauté' for 3 minutes if fresh or 5 minutes if frozen.
  7. Once done, open the pot, stir well, and serve over jasmine rice, brown rice, or zucchini noodles.
