- In a medium saucepan, combine pitted fresh sweet cherries with enough water to cover them. Bring to a boil, then reduce heat and mash slightly. Simmer for about 15 minutes until soft.
- Pour the cherry mixture into a blender and add raw honey, lime zest, and lime juice. Blend until smooth, and strain through a fine mesh sieve for a silky-smooth texture.
- Transfer the cherry syrup into a jar and chill in the refrigerator for at least 30 minutes.
- To serve, fill an 8oz glass with ice, pour 2oz of chilled cherry syrup over the ice, and top with club soda. Garnish with fresh cherries and lime slices.
- For a pitcher, mix all cherry syrup with club soda in a large pitcher filled with ice and stir well to combine.
