Ingredients
  

For the Chicken
  • 2 pieces Boneless, Skinless Chicken Breasts Substitute with thighs for extra juiciness.
  • 1/4 cup Honey Substitute with maple syrup for a vegan option.
  • 2 tablespoons Lime Juice Fresh lime is preferred.
  • 1 tablespoon Lime Zest Always use fresh for the best results.
  • 2 tablespoons Olive Oil Avocado oil is a suitable substitute.
  • 2 cloves Garlic Fresh minced garlic is recommended.
  • 1 teaspoon Cumin Can be replaced with coriander.
  • 1 teaspoon Smoked Paprika Regular paprika works too.

For the Rice
  • 2 cups Cooked Jasmine or Basmati Rice Cauliflower rice can be used for low-carb options.
  • 1 ripe Avocado Ensure it’s properly ripened for mashing.
  • 1 tablespoon Extra Lime Juice Enhances the avocado rice flavor.
Optional Add-Ins
  • 1/4 cup Fresh Cilantro or Parsley For garnish.
  • to taste Chili Flakes Optional based on spice preference.
  • 2 tablespoons Toasted Sesame Seeds For garnish and crunch.

Method
 

Chicken Preparation
  1. In a large mixing bowl, combine honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper. Whisk together until smooth. Add the chicken breasts and coat them thoroughly in the marinade. Cover and refrigerate for 30 minutes to 2 hours.
  2. Preheat a grill pan over medium-high heat for about 5 minutes. Lightly grease with cooking oil. Place the marinated chicken on the grill pan. Cook for 5-6 minutes on each side until internal temperature reaches 165°F (75°C).
Rice Preparation
  1. While the chicken is cooking, mash the ripe avocado in a bowl until smooth. Mix in lime juice, a drizzle of olive oil, and a pinch of salt for seasoning. Once the chicken is done, fold in the warm cooked rice until well combined.
Assembly
  1. Layer the creamy avocado rice mixture on the bottom of a mold. Carefully place sliced honey lime chicken on top, pressing gently to ensure stability. Sprinkle with cilantro, lime zest, chili flakes, and sesame seeds.
  2. Drizzle with extra lime juice just before serving. Enjoy your delicious creation!
