Chicken Preparation
- In a large mixing bowl, combine honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper. Whisk together until smooth. Add the chicken breasts and coat them thoroughly in the marinade. Cover and refrigerate for 30 minutes to 2 hours.
- Preheat a grill pan over medium-high heat for about 5 minutes. Lightly grease with cooking oil. Place the marinated chicken on the grill pan. Cook for 5-6 minutes on each side until internal temperature reaches 165°F (75°C).
Rice Preparation
- While the chicken is cooking, mash the ripe avocado in a bowl until smooth. Mix in lime juice, a drizzle of olive oil, and a pinch of salt for seasoning. Once the chicken is done, fold in the warm cooked rice until well combined.
Assembly
- Layer the creamy avocado rice mixture on the bottom of a mold. Carefully place sliced honey lime chicken on top, pressing gently to ensure stability. Sprinkle with cilantro, lime zest, chili flakes, and sesame seeds.
