Honey Lime Chicken Marinade
  • 1 lb Boneless, Skinless Chicken Breasts cut into bite-sized cubes
  • 3 tbsp Honey
  • 1 tbsp Lime Juice fresh
  • 2 tbsp Soy Sauce or tamari for gluten-free option
  • 2 cloves Minced Garlic fresh
  • 1 tsp Grated Ginger fresh
  • to taste Salt and Pepper
Rice Stack
  • 1 cup White Rice or brown rice for more fiber
  • 2 cups Water for cooking the rice
Fresh Ingredients
  • 1 medium Avocado toss with lime juice to prevent browning
  • 1/4 cup Cilantro chopped
  • 1/4 cup Red Onion thinly sliced
Garnish
  • 1 wedge Lime for serving

Method
 

Marinating and Cooking
  1. In a mixing bowl, whisk together honey, lime juice, soy sauce, minced garlic, grated ginger, salt, and pepper until smooth. Add the chicken cubes and toss to coat. Cover and marinate for at least 20 minutes, or up to 4 hours.
  2. In a medium saucepan, combine white rice with water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for 18 minutes. Let sit covered for 5 minutes.
  3. While the rice is resting, prepare the fresh ingredients. Dice the avocado, chop the cilantro, and slice the red onion.
  4. Heat a large skillet over medium heat. Cook the marinated chicken for 7 to 10 minutes until browned and cooked through, reaching an internal temperature of 165°F (75°C).
  5. Assemble the stack by layering the rice on each plate, topping with chicken, and garnishing with cilantro and a lime wedge. Serve immediately.
