  3. Drain, chop, and set aside the artichoke hearts.
  4. Thaw the spinach and squeeze out excess moisture using a clean dish towel.
  5. In a large skillet, heat oil and cook chicken for 4 to 6 minutes until mostly cooked through.
  6. Blend cottage cheese, garlic, salt, pepper, and onion powder in a food processor until smooth.
  7. Combine chicken, spinach, artichokes, and cheesy mixture in a baking dish, mixing in ⅔ of the mozzarella and parmesan.
  8. Cover with foil and bake for 20 minutes, then uncover and add remaining cheese on top. Bake for an additional 10 minutes.
