  • 1 can Artichoke Hearts drained
  • 1 cup Non-Fat Greek Yogurt
  • 4 ounces Light Cream Cheese
  • 2 cups Shredded Mozzarella Cheese divided
  • 1/2 cup Grated Parmesan Cheese
  • 2 cloves Garlic minced
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Ground Black Pepper or white pepper

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a medium casserole dish.
  2. In a large mixing bowl, combine non-fat Greek yogurt, light cream cheese, minced garlic, salt, and ground black pepper until smooth.
  3. Gently fold in the shredded chicken, spinach, artichoke hearts, and half of the mozzarella cheese until well mixed.
  4. Transfer the mixture into the prepared casserole dish and spread it out evenly. Top with remaining mozzarella and Parmesan cheese.
  5. Bake for 30 to 35 minutes until bubbly and golden brown on top.
  6. Let the casserole cool for about 5 minutes before serving.
