Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and gather your ingredients.
  2. Peel, core, and chop the cooking and eating apples into small pieces and set aside.
  3. In a saucepan, melt 45 g of butter, add the chopped apples, 60 g caster sugar, and lemon rind; cook until apples soften.
  4. In a separate saucepan, melt the remaining butter, whisk in flour, add milk gradually and cook until thick.
  5. Remove from heat, whisk in egg yolks and vanilla until combined.
  6. Pour custard over the apples, mix demerara sugar with cinnamon and sprinkle on top.
  7. Bake for about 20 minutes until golden brown and bubbling.
