- Preheat your oven to 400°F (200°C).
- Toss cubed sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper until coated. Spread on a baking sheet and roast for 20-25 minutes.
- Heat a tablespoon of olive oil in a skillet. Add cubed chicken seasoned with garlic powder, onion powder, salt, and pepper. Sauté for 5-7 minutes until cooked through.
- Mix Greek yogurt, lime juice, sriracha, cumin, remaining paprika, and salt in a bowl until smooth.
- Assemble bowls with a layer of rice, followed by sweet potatoes, sautéed chicken, and green vegetables.
- Drizzle the creamy sauce over the bowls and sprinkle fresh herbs on top before serving.
