Step-by-Step Instructions
  1. Preheat your oven to 360°F (180°C) and line a baking sheet with parchment paper.
  2. Wash the zucchinis and slice them in half lengthwise. Scoop out the seeds and flesh.
  3. In a large skillet over medium heat, warm the olive oil and sauté the chopped onion for 5-7 minutes until translucent.
  4. Add the ground beef to the skillet, breaking it apart, and cook for 8-10 minutes until browned; drain any excess grease.
  5. Stir in the tomato paste, Italian seasoning, garlic powder, salt, and pepper until combined.
  6. Pour in the tomato sauce, reduce heat, and simmer for about 15 minutes.
  7. Carefully fill each zucchini boat with the beef mixture.
  8. Top with shredded mozzarella cheese and bake for 20 minutes until cheese is bubbly.
