- In a blender, combine 1 ripe avocado, a handful of fresh herbs, the juice of 1 lemon, and a splash of olive oil. Blend until smooth, adding water if needed.
- Wash and chop 1 cucumber and a handful of cherry tomatoes into bite-sized pieces. Set aside in a large mixing bowl.
- Pour dressing over the chopped vegetables in the bowl. Gently toss until well coated.
- Slice half an avocado and arrange the slices on top of the salad for garnish.
