Preparation
- Line a baking sheet with parchment paper to prevent sticking.
- In a medium saucepan, combine granulated sugar, water, and light corn syrup. Stir gently and bring to a boil.
- Insert a candy thermometer into the saucepan and continue boiling until it reaches 300°F (149°C), about 10-15 minutes.
- Remove from heat, quickly add cinnamon oil and optional food coloring. Stir vigorously.
- Pour the mixture onto the prepared baking sheet, spreading evenly to about 1/4 inch thick.
- Allow to cool completely, about 30 minutes, then break into shards.
