Preparation Steps
  1. Peel and chop the potatoes into even chunks, then place in a large pot of salted water and bring to a boil. Cook until fork-tender.
  2. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Melt 3 tablespoons of butter in a bowl and warm the heavy cream until just warm.
  4. Drain the potatoes, mash until smooth, then mix in melted butter, cream, Parmesan, salt, and black pepper.
  5. Transfer the mixture to a piping bag and pipe small swirls onto the baking sheet, spacing them apart.
  6. Brush the tops with the remaining melted butter and bake for 15-20 minutes until golden brown.
