- Melt 2 tablespoons of unsalted butter in a skillet over medium-low heat. Add 2 sliced yellow onions, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 30-40 minutes, stirring occasionally, until golden brown.
- While onions caramelize, preheat your oven to 375°F (190°C). In a mixing bowl, combine 8 ounces of shredded smoked Gouda, 4 ounces of softened cream cheese, 1/2 cup of sour cream, 1/4 cup of mayonnaise, and 1 minced garlic clove. Mix until smooth.
- Once caramelized, fold onions into the cheesy mixture. Transfer to a small baking dish, spreading evenly.
- Bake for 20-25 minutes until the edges are browned and the dip is bubbly.
- Remove from oven and let cool briefly. Sprinkle 1 tablespoon of chopped chives on top before serving warm.
