  • 2 large Eggs (beaten) For binding.
  • 1 cup All-purpose flour For dredging.
For the Mango Salsa
  • 1 cup Mango (diced) Natural sweetness.
  • 1/4 cup Red onion (finely chopped)
  • 1 small Red bell pepper (diced)
  • 1 small Jalapeño (minced) Adjust for heat.
  • 1 tablespoon Lime (juice) For acidity.

Method
 

Preparation Steps
  1. In a shallow dish, combine shredded coconut, breadcrumbs, salt, black pepper, garlic powder, and paprika. Mix well.
  2. Set up dredging stations with beaten eggs in one dish and all-purpose flour in another.
  3. Dredge fish in flour, coat in eggs, then press into coconut mixture.
  4. Heat 1/4 inch of oil in a large skillet to around 350°F (175°C).
  5. Cook coated fish fillets for 4-5 minutes on each side until golden brown and flaky.
  6. In a medium bowl, combine diced mango, red onion, red bell pepper, and jalapeño. Add lime juice and mix gently.
  7. Drain the cooked fish on paper towels. Serve topped with mango salsa.
