Ingredients
  

For the Crust
  • 20 cookies Oreo Cookies crushed
  • 4 tablespoons Butter melted
For the Cheesecake Filling
  • 8 ounces Cream Cheese softened
  • 1 cup Powdered Sugar adjust based on taste
  • 1 cup Heavy Cream whipped
  • 1 teaspoon Peppermint Extract adjust quantity to preference
  • 1 teaspoon Vanilla Extract or almond extract
  • few drops Green Food Coloring optional
  • 1 cup Mini Chocolate Chips optional

Method
 

Prepare the Cheesecake Cups
  1. Crush Oreo cookies and mix with melted butter. Press into bottoms of serving cups and chill for 15 minutes.
  2. In a bowl, beat cream cheese and powdered sugar until smooth. Add heavy cream, peppermint, and vanilla, mix until fluffy.
  3. Layer the cheesecake filling into the cups over the crust. Add any desired chocolate chips.
  4. Cover and refrigerate for at least 2 hours until firm.
  5. Serve chilled and garnish with chocolate chips or mint leaves if desired.
