Ingredients

Filling Ingredients
  • 1 lb 97/3 Ground Turkey Provides lean protein for a hearty filling; swap with lean beef or chicken if preferred.
  • 1 cup Fat Free Feta Cheese Adds creaminess and tang to the filling; reduced-fat or regular feta may alter calorie count.
  • 1 medium Red Onion Introduces sweetness and crunch; substitute with yellow onion or shallots for a different flavor.
  • 2 cloves Garlic Enhances flavor with a savory note; fresh garlic is ideal, but garlic powder works (1/4 tsp per clove).
  • 1 tbsp Fresh Oregano Imparts a fragrant, herbaceous taste; use dried oregano as a substitute (1 tsp = 1 tbsp fresh).
  • to taste Black Pepper Essential seasoning for flavor balance; adjust to taste.
  • to taste Salt Essential seasoning for flavor balance; adjust to taste.
  • 4 Large Bell Peppers Serve as the vessel for stuffing; any color works beautifully.
Tzatziki Ingredients
  • 1 cup Fat Free Yogurt (Fage) Forms the base of the tzatziki, keeping it light and tangy.
  • 1 tbsp Garlic Paste Adds concentrated garlic flavor; substitute with minced fresh garlic (1 clove = 1 tsp).
  • 1/2 cup Feta Cheese (for Tzatziki) Adds flavor and richness; use leftover feta from the filling for minimal waste.
  • 1 cup Shredded Cucumber Provides cooling texture; grate and squeeze out excess water to avoid a watery sauce.
  • 2 tbsp Lemon Juice Brightens flavors and adds acidity; opt for fresh lemon juice over bottled when possible.
  • 1 tbsp Fresh Dill Offers a unique herbal element; fresh mint makes a delightful alternative.

Cooking Steps
  1. Preheat the oven to 400°F (200°C). Gather ingredients and prep your workstation.
  2. In a large mixing bowl, combine the ground turkey, feta cheese, diced onion, minced garlic, and oregano. Season with salt and black pepper, mixing until well incorporated.
  3. Slice the tops off the bell peppers and remove seeds and membranes. Stand the peppers upright in a baking dish.
  4. Spoon the turkey filling into each pepper generously, packing tightly, and cover the baking dish with aluminum foil.
  5. Bake for 30 to 45 minutes, removing foil for the last 10 minutes to allow tops to brown.
  6. While baking, mix together yogurt, garlic paste, crumbled feta, shredded cucumber, lemon juice, and dill for tzatziki. Chill in the fridge.
  7. Once cooked, let the peppers cool for a few minutes, then top with tzatziki and garnish with fresh dill.
