  • 1/2 cup Feta cheese Can use sheep’s feta for a unique taste
  • 1/4 cup Parmesan cheese Pecorino Romano is a great alternative
  • 1/2 cup Roasted red peppers Can substitute with sun-dried tomatoes

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place salmon fillets skin-side down, slice lengthwise to create a pocket, and drizzle with olive oil, seasoning with salt and pepper.
  3. Heat olive oil in a pan and sauté spinach with Italian seasoning, paprika, cayenne, salt, and pepper for 2-3 minutes.
  4. Remove spinach from heat, mix in roasted red peppers, feta, and Parmesan until combined.
  5. Stuff salmon pockets with the spinach and feta mixture, pressing down to secure.
  6. Bake in the oven for 12-17 minutes until salmon is opaque and flakes easily.
  7. Let cool slightly before serving, enjoy hot with a salad or side of grains.
