- Preheat your oven to 350°F (175°C) and lightly grease a 9×5-inch loaf pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and coconut.
- In another bowl, blend the melted butter, eggs, vanilla, buttermilk, and crushed pineapple until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Transfer the batter to the prepared loaf pan and smooth out the top.
- Bake for 55-60 minutes, or until golden brown and a toothpick comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring it to a wire rack.
