  • 2 large Eggs no substitutes recommended
  • 1 teaspoon Vanilla Extract replace with coconut extract for enhanced flavor
  • 1 cup Buttermilk coconut milk can be used for coconut flavor

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and coconut.
  3. In another bowl, blend the melted butter, eggs, vanilla, buttermilk, and crushed pineapple until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Transfer the batter to the prepared loaf pan and smooth out the top.
  6. Bake for 55-60 minutes, or until golden brown and a toothpick comes out clean.
  7. Allow to cool in the pan for about 10 minutes before transferring it to a wire rack.
