- Preheat your oven to 400°F (200°C) and grease a baking dish with 1 tablespoon of olive oil.
- Place the white fish fillets into the greased baking dish and drizzle remaining olive oil over them. Season with salt, black pepper, oregano, and thyme.
- Scatter halved cherry tomatoes, sliced Kalamata olives, minced garlic, and slivers of red onion evenly over the fish.
