Ground Beef Zucchini Filling
  • 1 pound Ground Beef Lean ground beef is preferred.
  • 4 medium Zucchini Halved lengthwise and hollowed out.
  • 1 cup Shredded Cheese For topping.
  • 1 cup Tomato Sauce For flavor and moisture.
  • 1 tablespoon Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Black Pepper Adjust to taste.
Garnish
  • 2 tablespoons Fresh Parsley Chopped for garnish.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and add ground beef, cooking until browned.
  3. Mix in garlic powder, onion powder, salt, and pepper.
  4. Add tomato sauce and stir to combine.
  5. Scoop out the insides of zucchini halves and fill with the beef mixture.
  6. Top with shredded cheese.
  7. Place in a baking dish and bake for 25-30 minutes until zucchini is tender.
  8. Garnish with fresh parsley before serving.
