Ingredients
  

For the Fish
  • 1 pound Whitefish (cod, halibut, rockfish, or tilapia) chopped into bite-size chunks
  • 1 teaspoon Ground Cumin
  • 1/4 teaspoon Cayenne Pepper adjust to taste
  • 1/4 teaspoon Chili Powder choose from 1/4 to 1/2 tsp
  • 1 teaspoon Fine Sea Salt
  • 1/2 teaspoon Black Pepper
  • 2 tablespoons Olive Oil for coating the fish
For the Rice
  • 2 cups Cilantro Lime Rice can substitute with any cooked rice or grain
For the Toppings
  • 1 small Purple Cabbage shredded
  • 2 Medium Avocados diced just before serving
  • 2 Roma Tomatoes diced
  • 1 Red Onion diced
  • 1/4 cup Cilantro chopped
  • 1/2 cup Cotija Cheese crumbled
For the Sauce
  • 1/2 cup Sour Cream
  • 1/4 cup Mayonnaise
  • 1 Lime Juice from 1-2 limes, adjust to taste
  • 1 teaspoon Garlic Powder
  • 1 tablespoon Sriracha Sauce optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss the bite-sized fish chunks with olive oil, ground cumin, cayenne pepper, salt, and black pepper until well-coated.
  3. Spread the seasoned fish evenly on the baking sheet and bake for 20 minutes.
  4. For a golden finish, switch to broil for the last 3-5 minutes, checking that the fish reaches 145°F internally.
  5. Prepare the cilantro lime rice in a skillet over medium heat for about 5 minutes, stirring occasionally.
  6. Alternatively, follow package instructions for fresh rice and mix in cilantro and lime juice.
  7. In a small mixing bowl, combine sour cream, mayonnaise, lime juice, garlic powder, and Sriracha, whisking until smooth.
  8. Assemble bowls with rice as the base, topped with fish and your choice of toppings.
  9. Finish off with a drizzle of taco sauce and serve with lime wedges.
