- In a medium saucepan, add peanut butter and honey over medium-low heat. Stir gently until the mixture is warm and slightly runny, about 2-3 minutes.
- Once warmed, remove from heat and let it cool for about 5 minutes.
- Add old-fashioned oats to the saucepan and stir well until all oats are fully coated.
- Preheat your oven to 350°F (175°C). Using a 12-cup muffin pan, evenly divide the oat mixture into each cup, pressing down firmly.
- In a clean saucepan, combine dark chocolate and coconut oil. Heat over medium-low until completely melted, about 4-5 minutes.
- Drizzle the melted chocolate generously over each oat cup.
- Place the muffin pan in the freezer for at least 1 hour to allow the chocolate to set.
- Once chilled, carefully remove the oatmeal cups from the muffin pan and enjoy.
