Ingredients
  

For the Cake Layers
  • 180 g unsalted butter Provides richness and moisture
  • 180 g caster sugar Adds sweetness and structure

  • 180 g plain (all-purpose) flour Ensure accurate measurement
  • 1.5 tsp baking powder Fresh for maximum effectiveness
  • 3 tbsp instant coffee granules Dissolved in water for flavor
  • 1 tbsp cocoa powder Enhances mocha flavor
  • 0.5 tsp vanilla extract Use pure extract for depth
For the Swiss Meringue Buttercream
  • 6 large egg whites No yolk for best whipping results
  • 400 g white sugar Sweetens and stabilizes
  • 450 g butter Softened before use

Method
 

Baking Instructions
  1. Preheat your oven to 170°C (325°F).
  2. Grease and line three cake pans with parchment paper.
  3. Cream together the unsalted butter and caster sugar until light and fluffy.
  4. Incorporate the eggs, one at a time, mixing well after each addition.
  5. Sift together the flour and baking powder, then fold into the wet mixture.
  6. Divide the batter into three bowls and flavor each bowl uniquely.
  7. Pour each flavored batter into the prepared cake pans and bake for 20–23 minutes.
  8. Cool the cakes in their pans for 2 minutes, then transfer to a wire rack to cool completely.
  9. Whisk the egg whites and sugar over simmering water until it reaches 71°C (160°F).
  10. Beat the meringue mixture on high speed until stiff peaks form.
  11. Gradually add soft butter to the meringue, mixing until smooth and creamy.
  12. Assemble the cake by layering with buttercream in between each layer.
  13. Decorate with remaining buttercream and optional chocolate or cocoa powder.
