- Start by washing a fresh cucumber under cool running water to remove any dirt. Slice the cucumber into thin, 1/8-inch rounds using a sharp knife or mandoline.
- Rinse one pound of strawberries to ensure they're clean and fresh. Hull them and slice into 1/4-inch thick pieces.
- Gently toss the cucumber and strawberry slices together in a mixing bowl.
- Whisk together the dressing ingredients in a separate bowl until emulsified.
- Pour the dressing over the cucumber and strawberry mixture and gently toss to coat evenly.
- Wash a handful of fresh mint leaves, chiffonade them, and toss into the salad.
