For the Chicken
  • 4 pieces Chicken Thighs bone-in, skin-on for juiciness

  • 1/4 cup Fresh Cilantro chop for garnish

Preparation Steps
  1. Prepare Marinade: In a large mixing bowl, whisk together the orange juice, lime juice, minced garlic, oregano, cumin, smoked paprika, black pepper, salt, and optional red pepper flakes until well combined.
  2. Marinate Chicken: Add the chicken thighs to the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap or transfer to a resealable bag and refrigerate for at least 2 hours.
  3. Preheat Oven/Grill: Preheat your oven to 425°F (220°C) or set your grill to medium-high heat.
  4. Prepare for Roasting: Remove the chicken thighs from the marinade and allow excess to drip off. Place skin-side up on a parchment-lined baking sheet and drizzle with olive oil.
  5. Cook Chicken: Roast the chicken thighs in the oven for 35-40 minutes until golden brown and reached an internal temperature of 165°F (75°C). If grilling, cook each side for 6-7 minutes.
  6. Rest Chicken: Remove from the oven or grill and let rest for 5-10 minutes.
  7. Garnish and Serve: Garnish with chopped cilantro and serve with lime wedges.
