  • 2 cloves garlic minced
  • 1 cup fresh herbs e.g., parsley or cilantro
  • 2 large eggs or a flax egg for a vegan option
For Coating
  • 1 cup breadcrumbs panko breadcrumbs preferred
For Seasoning
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper freshly ground
  • 1 teaspoon paprika for a hint of smokiness

Method
 

Preparation
  1. Finely chop the shrimp and sauté in a hot skillet with minced garlic and chopped herbs for 3-4 minutes until opaque and fragrant.
  2. Combine shrimp in a bowl with mashed potatoes and season with salt, pepper, and paprika.
  3. Shape the mixture into balls or patties, about 1 to 2 inches in diameter.
Coating and Cooking
  1. Set up a breading station with flour, beaten egg, and breadcrumbs.
  2. Dip each croquette in flour, then egg, and finally coat in breadcrumbs.
  3. For frying, heat oil to 350°F and fry croquettes for 3-4 minutes until golden brown.
  4. For baking, preheat oven to 375°F and bake for 20-25 minutes, flipping halfway through.
  5. Allow cooled croquettes to firm up before serving.
